Hiroshima Airport Hotel is located a 3-minute walk from Hiroshima Airport, Hiroshima's air gateway. Executive chef Yutaka Ota oversees all food and beverage facilities within the airport hotel, including Acero. Mr. Ota, who joined the hotel in 1997, has honed his skills in a wide range of cuisines, including Western cuisine, Japanese cuisine, and Chinese cuisine, before becoming the fifth executive chef in 2013. While still working as a commander, he generously pours his skills and ideas into each dish from his perspective as a chef.
``Since it's food, we take it for granted that it's delicious.What we aim for is food that not only tastes good, but also makes people who eat our food say, ``It's fun,'' and go home,'' says Ota. Hiroshima wagyu beef

Japanese black beef that was bred for the longest time in Hiroshima Prefecture. Some cows are rich in oleic acid, the main component of olive oil, and have soft meat, a rich aroma, and a light texture that is difficult to chew.

Chef Ota, who is in love with Hiroshima Wagyu, says, ``The more you chew, the more delicious it becomes, and the neutral flavor that makes it delicious even when it's lean is something special among Wagyu beef.'' I want to pay attention not only to its taste, but also to its history and tradition. In fact, Kuimachi, Mihara City, which is in the same city as Hiroshima Airport Hotel, is the birthplace of Hiroshima Wagyu beef. It is said that a cattle and horse market has been held here since the Heian period, and during the Edo period it grew to become one of Japan's three largest cattle markets, and was very popular as a cattle producing area. Cattle that had been bought and sold for agricultural purposes were later bred in Shobara City in the northern part of the prefecture to be used for meat production. In 23, it was registered as the first Japanese black beef in Japan.
