Mr. Shimizu, the head chef, shows off his skills at ``Conger eel and oysters Mametanuki''. Mr. Shimizu is a chef with a history of being selected as one of the top performers at the ``2nd Hiroshima Japanese Cooking Competition'' sponsored by Hiroshima Prefecture. After graduating from a culinary school in his native Ehime Prefecture, he gained experience cooking at various inns on Miyajima before moving to Kinsuikan. Since 2018, he has been working as the head chef at the restaurant ``Conger eel and Oyster Mametanuki'' attached to the inn.

``Conger eel and oysters Mametanuki'' uses boiled conger eel instead of grilled conger eel, and serves an unusual conger eel dish that is served in a ceramic bowl with rice and steamed at high temperatures. Also, since Miyajima is a place that attracts many tourists, Mr. Tsukumi wants to offer dishes that are typical of Hiroshima as much as possible. It is also one of the few restaurants on the island that is open for dinner, and in addition to conger eel rice, you can enjoy a la carte dishes and local sake from Hiroshima Prefecture, which are not on the lunch menu.
