Today's theme ingredient is "Onomichi Sakuradai".
Even Hiroshima residents may not know this, but Onomichi is the second largest area in the prefecture for sea bream catches.
It is said that in the past it was number one in the prefecture, and many sea bream are landed at Onomichi port.

In order to spread the word about the appeal of sea bream, we visited Eejan Onomichi Main Branch.
Just before the store opens at 9:00 a.m., the showcase is filled with wild red sea bream that was caught this morning.
The selection is such that it's no wonder they're ranked second in terms of catch, and they apparently sell out this amount every day.

Today, we had a freshly caught sea bream prepared by Mr. Nitta, a fisherman who also sells fresh fish here.
With skilled knife skills, the sea bream meat is skillfully removed from the bone, revealing a beautiful, white color.
Since it has just been caught, it has a firm texture.

Onomichi's sea bream feeds on a variety of food, including crustaceans and small fish, in its fishing grounds, and is known for its strong flavor.
After a little time has passed, the flavor will come out and you can enjoy it even more.
At this time of year you can also enjoy baby sea bream, which is said to be delicious both raw and boiled.
After taking a bite of the sashimi, Nita said, "Today's sashimi is delicious too!"

Mr. Sakamoto, a member of the local revitalization cooperation team, explains that they are considering spreading the word about this across the country.
