FooDrinpic Runway Report ~Etajima City Edition~
The FooDrinpic Runway aims to delve deeper into and communicate the appeal of the FooDrinpic entry theme!
This time we will be sending you a report on the event held in Etajima City.
The entries from Etajima City were "Etajimaman Bento/Kappo Daigaku" and "Authentic Mapo Tofu with Etajima Oysters/Sugos Cafe"!
Both dishes are packed with the charm of Etajima cuisine.
On the day, we borrowed Kappo Daigaku and gathered producers and fishermen from Etajima.
We sampled the entree menu and exchanged opinions.
The people who came on the day were (company names omitted):
Yanagawa Fisheries (oysters), Setouchi Itonami-sha (olive oil), Maruki Fisheries (particular fisherman), Katsuma-san (particular fisherman),
Hirai Sangyo (turtle), Hiramoto-san (cucumber), Iseya Consultant (cafe)
And many people gathered.
The sashimi and soft-shelled turtle soup prepared by the owner of Kappo Daigaku made use of the ingredients provided by everyone who came.
Everyone who sampled the new ingredients was impressed.
In particular, the suggestion to pair olive oil with Japanese cuisine was very Etajima-like.
Sasaki's love for Etajima ingredients brings out the best in each of his dishes.
Apparently the restaurant is considering introducing a new menu item called "Olive Gozen," so be sure to check it out.
And chef Kuwabata from Sugos Cafe made a dish using plenty of oysters from Yanagawa Fisheries.
An authentic mapo tofu dish was presented.
The rich flavor of the oysters is a perfect combination with the mapo tofu.
In no time the tasting skillet was empty.
This dish not only showcased the flavor of the oysters, but also the chef's skill in bringing out that flavor.
This is a standard menu item at Sugos Cafe.
At the end of the meeting, everyone exchanged impressions and opinions for the future.
There has never been an opportunity for producers to get together like this before.
In this way, cooking can be a catalyst for information exchange and horizontal connections,
It will also be a good opportunity to promote Etajima as a whole.
We also received some useful opinions for the future.
Once again, the FooDrinpic Runway was a time where we were able to learn more about the appeal of local food.
