FooDrinpic Runway Report ~Otake City Edition~
The FooDrinpic Runway aims to delve deeper into and communicate the appeal of the FooDrinpic entry theme!
The first commemorative event was held in Otake City, so we'd like to send you a report!
Otake City's entry is "Hiroshima Lemon Salmon".
Rainbow trout raised in the north of the prefecture are fed lemons at a fish farm on Atadajima in Otake City and raised to become Hiroshima lemon salmon.
This Hiroshima-born, Otake-raised salmon is processed immediately after being killed alive, giving it a chewy, elastic texture and a refreshing taste.
Just as the first harvest of the year was about to begin, producer President Kitano, Kuba Fisheries Association Chairman Kitabayashi, Ikeda, the owner of Japanese restaurant Uoike who was in charge of creating the menu, and Fujii-san gathered together and, during a television interview, explained the characteristics of Hiroshima Lemon Salmon and the menu items it was made for.
Kitano and Kitabayashi talked about the difficulties they faced in developing Hiroshima Lemon Salmon over the course of more than 10 years, as well as the challenges they faced in distribution.
His talk changed the way I looked at the Hiroshima lemon salmon in front of me.
Mr. Ikeda explained the characteristics of this Hiroshima lemon salmon while actually butchering it.
Even within a single salmon, different parts have different fat content and textures, and he explained these characteristics to us.

We were presented with a dish that utilized a variety of cooking techniques, including marinating in vinegar, pickling, grilling, frying, and dressing.
Kitano and Kitabayashi, who tried the dish, commented with gratitude for the dish, which used all the ingredients without throwing away even the bones,
They were amazed at the flavor of the Hiroshima Lemon Salmon, brought out by the chef's skill.
Mr. Ikeda of Uoike also commented that offering such local ingredients in his restaurant leads to a virtuous cycle that benefits customers, the local community, producers, and the restaurant, and all in attendance confirmed the importance of further promoting Hiroshima Lemon Salmon.

It was a time when I really realised that this would be a wonderful dish.
