The FooDrinpic Runway aims to delve deeper into and communicate the appeal of the FooDrinpic entry theme!
This time we will be sending you a report on the event held in Aki-Takata City.
The entry from Aki-Takata City is "Yasha Udon", which is spicier than a demon!
It sounds like a spicy dish, but it is a local specialty of Aki-Takata City and is very much loved in the area.
It seems to be a dish that has many passionate fans.
How do we enhance the appeal of this Yasha Udon?
The person chosen was Mr. Kamijo, a member of the Hiroshima branch of the Japan Chinese Cuisine Association and owner of the Chinese restaurant Shiki.
He is the owner and chef of a popular Chinese restaurant in Hiroshima where you can eat authentic Sichuan cuisine.
This time, Shiki was closed for lunch and we welcomed the staff from Kagura Monzen Tojimura, who normally serve Yasha Udon in Aki-Takata City, to visit us.
First, everyone tried the usual Yasha Udon.
It has a strong spiciness but also a delicious flavor that will become addictive!
It is also one of the rules for calling it Yasha Udon, to include green onions harvested in Aki-Takata.
The generous amount of green onions on top add a nice accent.
Kamijo had two suggestions for this delicious Yasha Udon.
One is a dish where Yasha udon is topped with a mixture of white onions and lemon, and the aroma is enhanced with hot oil.
Another thing we did was to give the pork a special treatment to bring out the texture and flavor, improving the overall flavor.
The lemon garnish is a nice touch, but by using red, green, white, and yellow, it adds to the color of the Yasha Udon.
The ingenuity in making it look even more delicious made it a truly outstanding dish.
In addition, the other dish is an adapted recipe that is typical of Shiki, with a numbing spiciness that feels like a body blow.
This dish is also titled "Beyond Yasha Udon."
This dish, which contains chili peppers, Japanese pepper imported from China, and raw garlic, caused many people to choke while cooking.
However, for those who like spicy food, it seems to be addictively delicious, and even though it was extremely spicy, the plate was emptied.
Mr. Sasaki, who usually cooks at Tojimura, said, "I've been making Yasha Udon for many years, and to be honest, I didn't feel like eating it on a daily basis, but
After trying this version, I thought to myself, I want to eat Yasha Udon again!" he commented.
We were all very grateful to Kamijo-san for paying respect to our previous recipes and providing us with ideas and techniques to make them even more delicious.
We're told that some new menu items may be added to Toujimura's Yasha Udon in the future, so stay tuned!
This time, the chef has arranged the dishes based on the local food culture.
It was an experience that made me realize that this beloved dish has the potential to continue to be loved by even more people.
