Hiroshima's Iron Man Goes! ~Akitaota Edition~
As the recommended menus from around the country compete for FooDrinpic,
A project in which professionals give advice on recommended foods from around the region, aiming to reach the pinnacle of deliciousness.
That's "Hiroshima Iron Man Goes!"
The third event was held with the theme of Akiota Town's recommended foods.
On November 11th, just before the results of the SNS Oshikatsu Battle were announced,
Osora Khan of Akinokuni Sake Brewery, who applied to FooDrinpic from Akiota Town, said,
We knocked on the door of Kawanami, a popular Chinese restaurant near Hiroshima Station.
The town's recommended food is "Tsukemono Yakisoba SPICE CURRY MIX," which has been loved by the town.
An evolved version of "Tsukemono Yakisoba".
To complete this dish, Matsumura, the owner of Kawanami, cooperated with the project, making use of his knowledge of spices and cooking methods cultivated in Chinese cuisine.
First, Osura Khan will actually cook the food to check its current condition.
Assuming it will be offered at events,
Thanks to streamlined operations and advance preparation, it only takes a few minutes to complete.
Matsumura also highly praised this point.
What situation do you want to serve the dish in? This is a very important point.
And we quickly tried the "Tsukemono Yakisoba SPICE CURRY MIX" that was completed.
Pickled vegetable yakisoba is a local B-class gourmet dish that was created from the custom of grilling frozen pickles in the snowy town of Akiota.
This time, "spicy takana" has been chosen.
In addition, the spice used is made from powdered komatsuna, a local specialty of the town, mixed with curry powder.
It tells the story of the town well.
With that input, Mr. Matsumura gave us a very simple but
Advice was given on how to enhance the appearance and taste.
There were two points.
The first is to emphasize the main part of the dish, which is to grill pickles.
Half the amount of mustard takana is stir-fried with the noodles, and the rest is added with spices and placed on top of the finished yakisoba.
It was truly an eye-opening piece of advice,
This dramatically increased the presence of the pickles and conveyed the message of the dish more strongly.
The second point is the appearance.
There are no photos this time, but by garnishing the plate with the key point, "Komatsuna",
To communicate in an easy-to-understand way which ingredients the town is promoting.
Although powdered komatsuna is used in abundance, it has no texture, and is mixed with spices so that it is difficult to detect its flavor.
Being able to talk about your food when serving it to customers will ultimately lead to increased satisfaction.
Matsumura said that the most important thing was to respect the wishes of Osora Khan, the person who proposed the idea.
He considered his advice from the perspective of, "What can we do to make it even better?"
Osura Khan also seemed very convinced by this.
Following the advice of the Iron Man,
I'm really looking forward to seeing how this improved dish will be evaluated on FooDrinpic!
