The Iron Man of Hiroshima is on the move! ~Kure~
As the recommended menus from around the country compete for FooDrinpic,
A project in which professionals give advice on recommended foods from around the region, aiming to reach the pinnacle of deliciousness.
That's "Hiroshima Iron Man Goes!"
The fourth event was held in November 4 in Kure City.
The venue was the Kure Central Wholesale Market.
The theme of this Hiroshima Iron Man trip is,
Pairing "Okoze", a recommended ingredient of Kure City, with local sake!
Following Shobara, the next Hiroshima Iron Chef to visit Kure was sommelier Kawasaki Kenta.
Together with chef Isao Takabayashi from Kure City, we paired local sake with the intimidating local fish "Kure Okoze"!
From Mr. Isao Takabayashi, head chef of Clayton Bay Hotel, who is also known by the nickname "Tough Chef":
Excellent dishes were presented that made the most of the characteristics of the Kure scorpionfish, including sashimi, skin and liver, and fried chicken.
And sommelier Kenta Kawasaki will explain about sake pairings.
After an introduction to the local sake made by the sake breweries in Kure City, we had three types of "Kure Okoze" dishes,
A pairing session of nine types of local sake from breweries in Kure city was held for those who gathered at the venue.
Participants tasted the food in their own way,
Each participant paired the Kure stonefish dish with a sake that would go best with it, and then voted for their favorite sake.
After the voting, Kawasaki also gave his vote and a comment.
Fisherman Kunio Okimoto from the Kamagari Fisheries Association also told us about the taste and characteristics of scorpionfish.
Enjoy the pairing of locally caught "Okoze" with locally produced sake.
All participants were able to experience the profound charm of the place.
They will bring this realization and emotion to the main FooDrinpic competition and aim to win.
